Symbolic of wisdom, peace, abundance and glory, the olive tree (Olea europeae) is an integral part of the Douro landscape, occupying the pathways between the schist walls of Quinta Nova. Apart from being considered part of the beautiful scenery, they reflect their own economic and historical importance. Since the 17th century, olive oil production has been worked on at the traditional mill close to the Pisca stream, which today forms part of the site of the olive oil museum.
Olive oil is produced from a process including hand-picking and the rigorous selection of olives (verdeal, cordovil and bical). By the end of the year it is in perfect condition to age. A careful cold extraction gives a clean finish, beautifully toned, intense aroma with no doubt to its elegant pallet.
